When a .INFO expires, How long after does it take before it becomes available to reg.

That would honestly be a hard question to answer budget if you don't do any research ahead of time. Your best bet would be to do a look around Google and maybe hoping you find what you want.

As far as I know, they become available just like .COM
, .NET, .ORG, etc.

Once deleted from the registrar, they'll stay in redemption
or pending delete/restorable for 30 days in Afilias (the
.INFO registry), then the REAL pending delete status for
5 days before becoming available on the 6th day.

The REAL question is how soon or how long 'til the
registrar will release it from their database. And there's no
law requiring them to release it except for a maximum of
about 40-45 days.
